Below is one of his most requested recipes for Spanakopita

Spanakopita (Spinach Pie)- Serves 15
Ingredients:
2 pounds fresh spinach or 3 packages frozen chopped spinach, well drained
1 Large bunch scallions
1 large onion, chopped
1 pound feta cheese, crumbled
7 eggs beaten
1 pound butter, melted or 3/4 cup olive oil
1 pound filo
1 bunch parsley, minced
1 tablespoon mint, minced or 1tablespoon mint, dried

Wash spinach and allow to drain in colander for 4-5 hours. Cut coarse stems off and discard. Chop spinach, salt lightly and let sit a while. Squeeze excess liquid out with hands. This ensures spanakopita is not soggy. Brown chopped onion in a little oil, and add to spinach to which chopped scallions have been added . Break up feta cheese and add to mixture, together with parsley, mint and beaten eggs. In a shallow baking pan 10×15, cover with six individually but-tered and/or oiled sheets of filo. Spread spinach mixture and cover with six more individually buttered and/or oiled sheets of filo. Bake at 350 for one hour. Cool slightly and cut in squares. Note: you may use either butter solely or oil or you may mix, as you prefer. If you choose to mix, use only half of the amounts indicated above.
